Denny Crum's Bologna Tacos By popular demand...a recipe from The Master...now the stuff of legend...Denny Crum's Bologna Tacos. Dave Jennings had the enviable task of translating the Master's scribe (hieroglyphics, really) into something accessible to the masses.
For best results, employ the assistance of others so the tacos can be enjoyed hot!
- Lightly fry 3/8" thick bologna (sliced in half). Hot & brown...not crispy.
- Lightly fry soft tortilla shells (in vegetable oil) on both sides... Stack them with paper towel in between each until you're ready to assemble your masterpiece. Add your innards...
- Diced tomatoes - Green taco sauce - Sharp cheddar cheese - Refried beans - Sliced avocados...California avocados, that is. (Don't question The Master). Do not add lettuce and/or onions as they distract from the taco's majestic and complex flavor.
Enjoy!
One final note from Dave:
Slicing and removing the avocado seed (pod) is not for the squeamish. I imagine it feels eerily similar to massaging an exposed human brain. Let only the heartiest soul in your group handle this important task.

A little about us...
Joe B. Hall, who grew up just 20 minutes north of the University of Kentucky campus in Cynthiana, had the unenviable task of following the legendary Adolph Rupp, who was forced to retire at age 70. But Hall, the former Rupp assistant, met the challenge head on, coaching three teams to the Final Four (1975, '78 and '84) and winning the 1978 NCAA Championship, the school's fifth title and first in 20 seasons.
Hall began his association with Kentucky as a student-athlete during the "Fabulous Five" era. He played one year of junior varsity and one year of varsity basketball before transferring to the University of the South in Sewanee, Tenn., where he finished his eligibility and set a single-game scoring record. Following his college career, Hall toured with the Harlem Globetrotters in 1951, but later returned to UK and completed his degree requirements.
His coaching career began at Shepherdsville (ky.) High School in 1956. It continued on to Regis College in Denver, where he spent five years (57-50 record), and Central Missouri State, where he recorded a 19-6 mark in one season before returning to UK as an assistant to Rupp on July 1, 1965.
As the UK head coach, Hall won National Coach of the Year honors in 1978 and four SEC Coach of the Year awards. He had seven players win All-America honors 11 times and nine Wildcats were voted All-SEC on 18 occasions.
Hall's squads recorded a 172-62 (73.5%) record vs. SEC competition during the regular season, winning eight SEC titles in 13 seasons and one league tournament championship in six tries.
While Coach Rupp witnessed 37 of his players drafted by the NBA, Hall saw 23 players drafted during his 13-year tenure, five in the first round.
Denny Crum's low-key personality worked wonders on the collegiate level. A teacher and a motivator, Crum annually built teams that play their best basketball at tournament time. After 30 seaons at Louisville, Crum retired on March 2, 2001, and had assembled a statistical package that would make any coach jealous. The man known as "Cool Hand Luke" has patrolled the sidelines at the University of Louisville for the since 1971, and the Cardinals were a dominant college program, especially in the 1980s. Only three other coaches have coached more NCAA Final Four teams than Crum, who has taken Louisville to six Final Fours (1972, 1975, 1980, 1982, 1983, 1986). Crum, who led Louisville to the 1980 and 1986 NCAA championship, was an assistant under John Wooden at UCLA for three NCAA titles. In 1993, Crum became the second fastest coach in history to win 500 games.
During his career, Crum has been named College Coach of the Year three times (1980, 1983, 1986), and has been Metro Conference Coach of the Year five times. Crum's record (675-295) included 21 seasons with 20 or more wins, including 14 straight. He also compiled three seasons of 30 or more victories. Crum retired as the 19th winningest coach in college basketball history and 16th in Division I. His .696 winning percentage is 49th best in history. Crum coached Louisville to 23 NCAA tournament appearances, including 19 in a 24-years stretch. Three of his squads have participated in the NIT. Under Crum, the Cardinals have captured or shared 12 Metro Conference regular season titles and 11 post season tournament championships. He has coached 28 players who have played in the NBA. On the international level, Crum coached the 1977 USA World University Team to a gold medal and the 1987 Pan American team to a silver medal. Crum is a 1958 graduate of UCLA, where he played two seasons for Hall of Famer John Wooden. He coached at Pierce Junior College (CA) for four seasons, and in 1968, became Wooden's top assistant and chief recruiter until becoming head coach at Louisville in 1971.
Dave Jennings was born on December 20th, 1966 in Rochester, NY. Family and career moves have seen him spend time in Milwaukee, WI, Detroit, MI, St. Louis, MO, Tallahassee, FL, Pittsburgh, PA and Louisville, KY...which has been home since 1991. After graduating from Florida State University in 1990, Dave briefly attempted to hold down a "real" job and realized that radio was where his heart was. After several years of "spinning the oldies" as an FM Air Personality, Dave was given the opportunity by Clear Channel to work as KJ1080's Program Director, a Nostalgia station at the time, and as the Evening Producer for Sportstalk84 and the Joe Elliott Shows on 84WHAS. After a few busy years wearing those hats, Dave accepted a position as Assistant Operations Manager for 84WHAS and tried his hand as a fill-in Talk Show Host. Dave has been heard over the years filling in for Tony Cruise, Lachlan McLean, Terry Meiners, Joe Arnold, Bob Valvano, Bob Sokoler, and (yes) Cindi Sullivan. Dave's meager gardening knowledge certainly has paid off, since there isn't anything that doesn't come up on The Joe B & Denny Show! Dave can be heard every weekday with former UK Coach Joe B Hall and former UofL Coach Denny Crum from 10 until Noon on Louisville's 790WKRD and more than 15 affiliates statewide. Dave also handles the production duties for the Kentucky News Network...producing and distributing the commercial inventory to more than 90 member stations. During his free time, Dave enjoys spending time with his wife Becky, his stepson O'Keeffe, his sister Karen and visits Mom and Dad in Florida as often as possible. He enjoys bowling (managing to hold a 220 average and has a 300 game to his credit), listening to a wide variety of music, taking in as much of the sports world as he can stand and spending as much time outside as possible! Maybe Joe B & Denny's tales of fishing and crazy outdoor adventures have rubbed off a bit?
OUR FALLEN TEAMMATE
JACK LUCAS (1965 - 2007)

His family knew him as Michael Shawn Sage. To us, he was the gruff, but lovable Jack. He was our Producer from the inception of the Joe B and Denny Show and helped shape it into the program it is today. A long time radio veteran, his music collection and most notably, his music knowledge was unmatched. While our show will continue, the songs, the subtle touches and the hilarious, "not for prime time" asides into our headphones can never be replaced. Rest in Peace, my friend. The music is certainly better where you are now.

During the early days of the Joe B & Denny Show, a seemingly normal day by all accounts, a caller claimed that he had recently reeled in large crappie on a chicken liver! After this alleged incident and infamous phone call, Chicken Liver Tim was born. Besides being a regular contributor to the show, Tim also claims to be quite the chef. If you'd like to share your alleged fishing escapades, jokes and recipes with Tim, visit chickenlivertim@yahoo.com.
Hello again my good friends. I am here to save you from your back to school blues. The most requested recipes I've had this year are the "Throw it in the crock pot" ones. This one will please them all......
Sausage and Tortellini Soup
6 ounces of fully cooked Turkey Sausage(cut into 1/2
inch slices) 2 cups pre-shredded coleslaw mix 1 cup frozen cut green beans 2 cans Italian-style stewed tomatoes 1 can CONDENSED french onion soup 3 cups water 1 9 ounce pack of tortellini Grated Parmesan cheese Place sausage, coleslaw mix, green beans, tomatoes (don't drain), soup and water. Cover, set on high and cook for 8-9 hours. When all is tender(20min before time is out) stir in tortellini. Cook for those 20mins and oooooh baby. Ladle into a soup bowl and add the Parm. I slurp this down
right before a fat Sub-sandwich.......You have enough goin' on in your life this week without more worries.... Enjoy the Olympics, they are actually fun to watch! Be good, be careful, and go TEAM USA!!!!!!!...T_________________________________________________________________ HELPFUL HINTS OR OLD WIVES TALES? YOU BE THE JUDGE... How many of these did your know about?
sealed envelope - Put in the freezer for a few hours, then slide a knife under the flap. The envelope can then be resealed. (hmmmmmm). ====================================================== Use Empty toilet paper roll to store appliance cords. It keeps them neat and you can write on the roll what appliance it belongs to. ============================================ For icy door steps in freezing temperatures: get warm water and put Dawn dish washing liquid in it. Pour it all over the steps. They won't refreeze. (wish I had known this for the last 40 years)! ============================================ To remove old wax from a glass candle holder, put it in the freezer for a few hours. Then take the candle holder out and turn it upside down. The wax will fall out. ============================================ Crayon marks on walls? This worked wonderfully! A damp rag, dipped in baking soda. Comes off with little effort (elbow grease that is)! ============================================ Permanent marker on appliances/counter tops (like store receipt BLUE)! Rubbing alcohol on paper towel. ============================================= Whenever I purchase a box of SOS Pads, I immediately take a pair of scissors and cut each pad into halves. After years of having to throw away rusted and unused and smelly pads, I finally decided that this would be much more economical. Now a box of SOS pads last me indefinitely! In fact, I have noticed that the scissors get 'sharpened'' this way! ============================================= Blood stains on clothes! Not to worry! Just pour a little hydrogen peroxide on a cloth and proceed to wipe off every drop of blood. Works every time! ============================================= Use vertical strokes when washing windows outside and horizontal for inside windows. This way you can tell which side has the streaks. Straight vinegar will get outside windows really clean. Don't wash windows on a sunny day. They will dry too quickly and will probably streak. ============================================ Spray a bit of perfume on the light bulb in any room to create a lovely light scent in each room when the light is turned on. ============================================ Place fabric softener sheets in dresser drawers and your clothes will smell freshly washed for weeks to come. You can also do this with towels and linen. ============================================= Candles will last a lot longer if placed in the freezer for at least 3 hours prior to burning. ============================================= To clean artificial flowers, pour some salt into a paper bag and add the flowers. Shake vigorously as the salt will absorb all the dust and dirt and leave your artificial flowers looking like new! Works like a charm! ============================================= To easily remove burnt on food from your skillet, simply add a drop or two of dish soap and enough water to cover bottom of pan, and bring to a boil on stove top. ============================================== Spray your TUPPERWARE with nonstick cooking spray before pouring in tomato based sauces and there won't be any stains. ============================================= Wrap celery in aluminum foil when putting in the refrigerator and it will keep for weeks. ============================================= When boiling corn on the cob, add a pinch of sugar to help bring out the corn's natural sweetness ============================================= Cure for headaches: Take a lime, cut it in half, and rub it on your forehead. The throbbing will go away. ============================================= Don't throw out all that leftover wine: Freeze into ice cubes for future use in casseroles and sauces . ============================================= To get rid of itch from mosquito bites, try applying soap on the area and you will experience instant relief. ============================================= Ants, ants, ants everywhere ... Well, they are said to never cross a chalkline. So, get your chalk out and draw a line on the floor or wherever ants tend to march. See for yourself. ============================================ Use air-freshener to clean mirrors. It does a good job and better still, leaves a lovely smell to the shine. ============================================ When you get a splinter, reach for the scotch tape before resorting to tweezers or a needle. Simply put the scotch tape over the splinter, and then pull it off. Scotch tape removes most splinters painlessly and easily. ===================================== Now look what you can do with ALKA Seltzer........ Clean a toilet. Drop in two Alka Seltzer tablets, wait twenty minutes, brush and flush. The citric acid and effervescent action clean vitreous China. ============================================ Clean a vase. To remove a stain from the bottom of a glass vase or cruet, fill with water and drop in two Alka Seltzer tablets. ============================================ Polish jewelry. Drop two Alka Seltzer tablets into a glass of water and immerse the jewelry for two minutes. ============================================= Clean a thermos bottle. Fill the bottle with water, drop in four Alka Seltzer tablets, and let soak for an hour (or longer, if necessary). ============================================= Unclog a drain. Clear the sink drain by dropping three Alka Seltzer tablets down the drain followed by a cup of Heinz White Vinegar. Wait a few minutes, and then run the hot water. =============================================

All this talk about fish tacos, I think I'll throw my recipe in the mix...... Chipotle Fish Tacos
1 1/4 Marinade
1 1/2lb Cod fillets 1/4 cup mayo 1/4 cup sour cream 12 corn tortillas (warmed) 2 cups shredded green CABBAGE In a plastic bag, pour 3/4 cup of the marinade into bag with fish and squish until covered. Seal and stick in the fridge for 30 min. Remove fish from marinade and discard that marinade. Grill or broil fish turning once while brushing. Meanwhile, in a small bowl, combine mayo, sour cream and remaining marinade. To serve, use 2 tortillas per taco, top fish with cabbage and drizzle with sauce. Ooh Baby The main ingredient for this is your choice of your favorite marinade.
I have found a store called Fresh Market that has every single type... my favorite is Chipotle with Lime Sauce........welcome back everyone it's good to have you home...........T |
